Message bearings, seals, piston rings, oil pump, water pump, thermostat, and pistons if you overbore.

Other required parts:
timing belt
tensioner
idler pulleys

Would be a good time to replace the detonation sensor too.

Machining of the parts is vital too.
Heads: Thorough cleaning, then valve job - regrind valve faces and valve seats. Hand lap the valves for best seal.

Block: Hottank to thoroughly clean the block. Replace freeze plugs. Hone the cylinders if they are in good shape, if not, try rigid honing to correct any minor eccentricity, if still no dice, rebore and hone. Paint block to protect from oxidation.

But like Nick said, the quality of the engine depends on how well it was rebuilt. Attention to proper bearing tolerances, torque specifications and care of the parts when handling them is vital. A properly rebuilt engine can easily be better than what comes from the factory - you just have to build it right.
